Nigerian Christmas Fruit Cake

This Recipe is a reload of the Cake I made a year ago and a seasonal Cranberry Glaze. The Nigerian Christmas Cake is definitely very much influenced by the large number of cultures that have influence Nigerian cuisine over the past centuries. Perfect for Christmas and any family gathering this cake can always be spice up by adding hot chocolate and or any glaze you have on hand.

The cake largely reminds me of Italian Panetone as its actually more of a bread than cake. When it comes to the filling this time around, I chose to use only raisins this time around which I soaked in warm water for half a day.

Ingredients

Instructions

  1. Put the dried fruits in a bowl and cover with 100 ml of hot water. Let the fruits sit for at least two hours or overnight. Mix all the dry ingredients together, then mix the vegan eggs as indicated on the package. Combine eggs with dry ingredients, butter and water. Add the dried fruits and spices. Then place the dough in a round baking pan. Bake the cake for 60 minutes or until set in the middle.

2. Now mix  Lemon Juice and the powdered sugar until you have a smooth glaze. When the glaze hardens, you can add either lemon or water to soften it again.

Fruit Cake

  • 380 g of flour 

  • 380g soft unsalted butter

  • 6 vegan eggs

  • 350 g brown Muscovado sugar

  • 2 tablespoons of apple cider vinegar

  • 2 teaspoons cinnamon

  • 1 teaspoons of Nutmeg

  • 200 g dreid rasins 50ml of boiling water

    Lemon Glaze

  • 68g powdered sugar

  • Juice from 1 Lemon
