Senegalese Sombi Pudding with fresh Mangoes

Finally had the time to post this beautiful recipe that I make every other month in different variations. I have taken a series of pictures of Senegalese Sombi pudding but was l never very happy with the outcome. This week I made another attempt at shooting this recipe and was quite happy with the outcome.

Senegalese Sombi Pudding is made with rice, usually you can use any kind of rice that you have stored but I do recommend Milkrice or Risotto Rice which is better for this kind of recipe. I like using Coconut milk as its more creamy and makes for a better Pudding consistency.

In general I just love using anything coconut during citrus season, I think it matches so well with Mandarines, Lemons and any other Citrus Fruits, if you don’t have access to mangoes. With this recipe I added more flavor by adding cardamom and Cloves with a lovely flavor outcome. There are a few other Sombi recipes from some of my favorite bloggers including Yummedleys Sombi Pudding, Sombi is so versatile and your imagination really is the limit to what flavors and fruits you want to add to the Pudding.

Instructions

  1. Wash the rice and then add all the ingredients and cook for 45-60 minutes

  2. Then let the rice cool down and stir in coconut or soy milk again.

  3. Cut the mangoes and then add them to the pudding.

Ingredients

For the Moringa Dough 

  • 125 Milkreis or Risotto Rice

  • 400 ml Coconut milk

  • 3 Cloves

  • 1 Cinnamon Stick

  • 1 Pinch of Cardamom

  • 1 Pinch of Salt

  • 50 g Sugar
