Easy Apple Almond Tart

This Apple Almond Cake is more of a lesson in Food Photography than banking. I made this Apple Almond Tart a few years ago and wasnt very happy about the Phtographic results. One of the main isssues in the old images was the light or the lack of controlling it, really. In the new shots of the same Tart I focused more on the actual ingredient, which is the apple, with diffrent shots focusing on texture and colors. And another major focus was chasing the light and figuring out at which position the subject is displayed best. When you scroll to the buttom of this post you will see the older picture of the Apple Almond Tart I took in late 2018.

These apples were sourced from a local farmers market in Vienna, they are called “Gala” apples from Lower austria and I must say some of the best ones I have eaten so far. The beauty of food really is that depending on were you source it, they tend so have unique tastes. These apples are extraordinarly sweet and paire so well with other fruits and ingredients such as Pomegranates and Almonds.

Interestingly this Almond tart is what I would call a left over recipe. From making Ice cream, I had 6 left over egg whites and the easiest thing to make was this almond tart, that is so simple and easy to make. The almond flour that I used was actually homemade, very finly and thouroughly grated organic whole almonds.

Grinded for almost 8 Minutes and then slowely sifted, you can create very fine almond flour that is perfect for this recipe. I currently dream of the flavor of these apples that are simply so packed full with flavor and sweetness that really anything you make turns out great. When it comes to deciding what to make with apples, I like to keep it as simple as possible. For some reason apples just inspire me to create traditonal recipes with easy accesible and simple ingredients.

Ingredients

Instructions

  1. For the Tart Dough cut the cold butter in smaller parts. Mix the sugar and the Flour together and work in the cold Butter with your hands of a Standmixer with the Dough Hock.

  2. Once you have a homogenous dough, wrap it in foil and put in the fridge for 30 Minutes.

  3. For the Filling beat the egg whites on high speed and add salt and powdered sugar slowly until the Egg white mass is stiff.

  4. Mix the Almond Flour and Cornstarch and put in a blender to make it finer. Now, sift the mixture and add into the egg whites. Fold it in with a wooden spoon and add all other ingredients.

  5. Put the previously made dough from the fridge into the Tart form by rolling it out with a rolling pin and putting it into a Form. Bake the Tart now for 15 Minutes.

  6. Pour the Filling onto the finished Tart dough. Peel and cut the Apples and lay them on the top and bake for 35 - 40 Minutes or until light brown. Let the Tart cool and enjoy.

Ingredients

 For Tart Dough

  • 80 g Sugar

  • 200 g cold Butter

  • 300 g All-Purpose Flour

For the Tart Filling

  • 150 g Apples (6 - 8 small Apples)

  • 6 Egg Whites

  • 1 Pinch of Salt

  • 1 Tbsp. of Cinnamon

  • 1/2 Tbsp. Cardamom Powder

  • 2 Tbsp. Baking Powder

  • 80 g Sugar

  • 125 g Almond Flour or Almond ground & sifted

  • 25 g Starch Powder

  • 80 g powdered Sugar
