Madeleines with Lemon - Moringa Glaze with Coconuts
Madeleines are something intricate and special, so closely knit to the French cuisine, a classic, a staple of French Patisserie. In combination with a lemon moringa glaze and sprinkled with coconuts, I have given this French bakery a west African twist. Easily made, all you need a is beautiful Madeleine form that will give these little bakes the typical shape that makes them recognizable.
I have used moringa in so many of my recipes and sometimes there are phases in my creative journey by which I just feel inspired by one ingredient, fruit or vegetable and end up making a dozen recipes with that very ingredient. Moringa powder is one of them, very versatile and distinct in flavor, the Powder can be used in a number of bakeries, breads and cookies. Dubbed the African Matcha, the properties in this powder are versatile, increasing overall health and the immune system. Enjoy this easy and quick Madeleines recipe with your afternoon tea.

Preheat oven at 280°C. In the meantime brush the Madeline forms with butter and sprinkle some extra flour atop the form.
Mix the sugar and eggs together, then start adding all the other ingredients together.
Let the mixture stand for 35 Minutes, then pour 1 1/2 Spoons into each Madeleine mould
Bake the Madeleines for 8-12 Minutes or until the Madeleines have risen slightly. The let the Madeleines cool for a while.
For the Glaze mix the juice and powdered sugar together, then add the Moringa to the mixture. Drizzle some Glaze and Coconuts on the Madeleines.
Ingredients
For the Moringa Dough
2 large Eggs
100 g Caster Sugar
125 g All Purpose Flour
85 g Butter
8 g of Baking Powder
For the Moringa Lemon Glaze
145 g fine powdered Sugar
Juice from 1 Lemon
1 Tablespoon of Moringa Powder
To sprinkle
3 Tablespoons of grated Coconuts
