Nigerian Coconut Candy

As the name already says it is maid mainly of Coconuts and a staple sweet snack on Nigerias streets. When you peruse the internet or even the streets of Nigeria you will find it in diffrent shapes and size. From round (like in this recipe) to grated, coconut candy depending on which part of Nigeria you find yourself in is made in so many diffrent ways but always has the same distinct caramel taste.


What I love about this recipe is that it is so easy to make and all you need are two ingredients. Another great aspect about Nigeria Coconut Candy is, that its made from fresh Coconuts. In Europe we are used to using the dried shredded coconuts that come packed in Plastic and taste great but nothing compares to making something from fresh ingredients.

The fresh coconut flesh that was infused with Coconut water give the candy a kind of freshness, while the sugar conservs the fresh candy. I would almost rename Nigerian coconut candy, coconut caramel because of the flavor, texture even the color reminds me of nothing short of caramel.

The key to seleceting the right coconuts for this recipe is putting the coconut to your ears and making sure that there is water in the coconut. If there is none then you can be sure that these coconut are quit old and maybe even dry, whch is something you dont want when buying coconut candy.

Instructions

  1. Break the Coconut in halves and put the coconut water aside. Then break the coconut flresh out of the brown Shells.

  2. Now great the Coconuts. It does not have to be finely grated.

  3. Put the Sugar in a Soucepan and start cooking it on low to medium heat. Stir the sugar as your are cooking it.

  4. Once Caramel starts to form and the sugar turns light brown ad the Coconuts.

  5. Stir until all the coconuts are coated with caramel. Put the sauce pan away from the heat and let it cool a little. Then start forming small balls.

  6. The candy can be stored for up to 4 weeks in the fridge.

For the Coconut Candy

  • 1 Medium sized Coconut or 250g of freshly grated Coconuts

  • 1 Pinch of Salt

  • 1/2 teaspoon of nutmeg (this is optional)
