Shuku Shuku or Coconut Balls

Shuku Shuku is another classic Nigerian dessert but this one is a bit diffrent as it is atributed to having its origins in the North of the Country. Diffrent to other traditional nigerian desserts that are often fried, this one is baked and made of mostly butter and coconuts.

Shuku Shuku or coconut balls are an easy addition to your Christmas Cookie Selection. The great thing about this recipe is that you can use dried or fresh Coconuts and you will acheve the same results. I experimented a bit with the level of sugar and decided less is more, as Coconuts naturally have a lot of sweetness in them.

From my view I feel like Nigerian Shuku Shuku is perfectly paired with milk or pudding. Dipping it into either of them and eating it like that. Its important to not bake them to long and rather take them out of the oven when they have a light brown color, as the longer they stay in the oven the harder they will be once you eat them.

Ingredients

Instructions

  1. Pre- Heat the oven and prepare a baking tray with parchment paper

  2. Mix all the dry ingredients including the spices.

  3. Now mix the Egg Yolks until they look creamy

  4. Lowly add the dry mix to the Egg Yolks and mix as you are adding them.

  5. Now, form small balls with your hands or use two spoons and put them on the baking tray.

  6. Bake for 20-25 Minutes at 180°C or until lightly brown.

    Tip: You dont have to leave much space inbetween cookies as they are not likly to spread or rise.

     

For the Shells

  • 175g of All Purpose Flour (2 Cups)

  • 120g of grated/shredded Coconuts

  • 125g of white Confectioners Sugar (1/2 Cup)

  • 3 Egg Yolks

  • 1 Pinch of Nutmeg

  • 1/2 Teaspoon of Cinnamon

  • 1 Pinch of Backing Powder (Optional)
