Apple Caramel Cookies

Sometimes I have the feeling that there is no such thing as apple season. Apples are always in season and the only fruit that is around constantly but officially autum is the apple season. I choose to do these easy apple cookies. I made them first about 10 years back and they were my favorite cookies then but I just forgot all about them. Now I wanted to make them again I just couldn’t find the recipe and had to experiment a view times before I got the perfect cookie batter and taste.

How you proceed with this recipe is really up to you. I like to knead the dough with my hands rather than a Kitchenaid. You pour the flour on a working top and make a mold in the middle where you place all the other ingredients excluding the apples. Peel the apples and cut them as small as possible since it’s easier to work with smaller apple pieces.

In the final picture you see a caramel glaze. The cookies have caramel taste from the brown sugar and combined with the oats and apples its quite perfect but if you want that extra caramel tastes you can add the caramel glaze like in the picture.
