Ingredients
For the Cake
380 g Flour - 3 1/8 Cups
380g soft unsalted Butter – 3 1/8 Cups
6 vegan Eggs
350 g brown Muscovado Sugar
2 Tablespoons apple cider vinegar
2 Teaspoons Cinnamon
2 Teaspoons Christmas Spice
150 g dried Apricots
150 g dreid Cranberries
100ml Chardonney
50ml boiling Water
Cranberry Glaze:
170 g Cranberry Jam
68g Powdered sugar
1 Lemon Juice
Instructions
Put the dried fruit in one bowl and cover with 100ml of hot Water and Chardonnay. Let the Fruits sit for at least two hours or overnight.
Mix all the dry ingredients together, then mix the vegan eggs as instructed on packaging. Combine eggs with dry ingredients, butter and Water. Add the dried fruits and spices. Then place dough in a 2" * 4" baking pan. Bake the cake for 60 Minutes or until set in the centre.
Now mix the Cranberry Jam, powdered sugar and lemon together until you have a homogenous glaze. If the glaze starts getting hard you can add either lemon or water to soften it up again.
