Matcha – White Chocolate Cookie

Okay, by some point you’ll notice that I’m crazy about chocolate and in particular white chocolate but then again Matcha - White chocolate cookies are a classic.

The green tea aroma corresponds perfectly with the white chocolate and makes the cookies one of my favorites. I only used two teaspoons of Matcha but you can use a lot more if you’re a Matcha Junkie like me.

Xylitol sugar makes the cookie not to sweet, however the white chocolate on top gives the Cookie that extra sweetness without going over the edge. I made these Cookies the old fashioned way, not with a kitchen machine but by hand. Somehow kneading the dough by hand just makes all the difference in how the dough feels and looks at the end of the process. You knead the dough for about five minutes and make sure to let the dough rest for about 30 minutes.

You’re going to find quite a few Matcha – White chocolate recipes on the internet but this one is quite mealy and less crunchy and if you’re into mealy cookies, matcha and white chocolate well then this recipe is just for you.
