Gingerbread Bundtcake with Chocolate - Mocca Glaze
Its Christmas Season and to be honest I still cant believe it. It seemed like not many weeks ago that I was sitting in the sun enjoying the warm weather. Now the Christmas lights are up in the entire city and seasonal music is playing on the radio already. To be honest Im not yet in the Christmas mood despite my excesive cookie baking and this gingerbread bundt cake that I made for you guys.
Even tough Bundt cakes are a classic over here I could not find a bundt cake form in my overcrowded kitchen. I had to resort to buying a new bundt cake form but as I try to be more sustainable in my buying decisions I decided for a vintage bundt cake form from 1973.
Used but no less pretty and the most important of all is that it doese the simple trick of baking a marvelous bundt cake. I decided to make a gingerbread flavored cake because there is nothing that screams christmas like gingerbread.
The spice is used in many european countries for cakes, cookies and even coffee. I used a pre packaged ginngerbread mix (I know not the best) but hey its much easier.
If you have the time and patience to mix a gingerbread mix the most important ingredients are pepper, staranis, cardamon, cinamon, salt and coriander. I guess the most important is to find the right mixture of these ingredients. To spice it up a bit I used a Chocolate - Mocca Glaze infused with very densly brewed coffee. This cake is done very fast and safes you the time you can spend with family and friends. And after making christmas diner its best to make a simple dessert that doesent take lots of time.
