Double Chocolate Cupcake

These Cupcakes are one of my favorites. They are a bit crunchy on the outside and very fluffy on the inside. As a little extra I added a liquid chocolate center for the really chocolate crazy foodies. These Cupcakes don’t only look lovely but have an addiction potential.

Coconut sugar has its own unique taste and complements the raw coco powder used in this receipt. To save on the sugar side I used raw coco powder which has no added sugar and gives the cupcake an added nutty flavor. Of course you can use the Coco powder of your choice if you’re not looking to reduce the amount of sugar in them. The recipe yields about 10 Cupcakes and I used Cupcake wrappers that where 5,5cm in diameter.

It’s important to only fill the cupcake wrappers by more than 2/3 because the Cupcakes tend to rise quite a lot. For the non - German readers: in Austria and Germany we use Cream stiffener which is a kind of powdery starch mix. As an alternative I would suggest either pure corn starch to stiffen the cream or guar gum flour.
