Chocolate - Berry Dream Cake

This cake has a sweet sponge layer and a vegan berry coulis in between. The chocolate cream has a nutty flavor that doesn’t overpower the other taste components, complete with is creamy consistency. To achieve a super fluffy sponge cake I use sparkling water which makes the cake super fluffy and acts as an agent for the other ingredients like the baking soda. I used two different types of sugar to sweeten the cake. For the sponge brown sugar which gives the cake a caramel taste. I find that brown sugar is best combined with fruits such as apples and is best for a sponge cake. I didn’t sweeten the berry coulis because the berries I used where quite sweet in themselves. It really depends on what kind of berries you choose and if they are to sour I would add 3 Tablespoons of Xylitolsugar.

For the sponge I used two adjustable Cake setting rings with a 180cm diameter. Line both cake setting rings with parchment paper and then preheat your oven at 200°C. In other to achieve super straight cakes that you can place upon each other easily you can wrap wet kitchen towels around the Cake Setting rings. Im my case I forgot all about doing this and had to chop away the top layers of both cakes.
